Zucchini rolls with meat and mushrooms can be prepared quickly and there will be enough for the whole family! Remember a few tips to make the dish amazing!
Be sure to squeeze the juice from the zucchini so that it does not leak out during baking. Instead of one whole egg, you can add two yolks to the dough.

Zucchini rolls

Ingredients

• 300 g zucchini
• 100 g ground meat
• 50 g mushrooms
• 1 egg
• 2–3 tbsp semolina
• 2 tbsp flour
• 1/4 tsp salt
• 1/4 tsp pepper
• 50 g onions
• 3 tbsp sour cream
• 50 g cheese
• 30 g dill
Preparation

1. Grate half a zucchini on a coarse grater.
2. Combine zucchini, egg, semolina, flour, salt and pepper in a small bowl.
3. Divide the mixture into three equal parts to bake pancakes.
4. Line the pan with baking paper and form three elongated pancakes on it. Bake the zucchini dough for about 15 minutes at 180 degrees.

Don`t forget to flip the pancakes so both sides turn brown. Do not bake one side until done, it will be easier to roll the roll.
5. Finely chop onions and mushrooms, then add ground meat and fry everything until the meat is fully cooked.
6. Place a layer of ground meat with mushrooms on the pancake and roll it into a roll.
7. Prepare a mixture of sour cream, grated cheese and dill. Before serving, spread the rolls with this sauce and put in the oven for 2 minutes.
