Be sure to squeeze the juice from the zucchini so it doesn`t run during baking. Instead of one whole egg, you can add two yolks.

Zucchini rolls

INGREDIENTS

300 g zucchini
100 g ground meat
50 g mushrooms
1 egg
2-3 tbsp semolina
2 tbsp flour
1/4 tsp salt
1/4 tsp pepper
50 g onion
3 tbsp sour cream
50 g cheese
30 g dill
PREPARATION

1. Grate half a zucchini on a coarse grater.
2. In a small bowl, mix the zucchini, egg, semolina, flour, salt, and pepper.
3. Divide the mixture into three equal parts to fry pancakes.
4. Line a baking sheet with parchment paper and form three elongated pancakes on it. Bake the zucchini batter for about 15 minutes at 180 degrees.

Don`t forget to flip the pancakes so both sides are browned. One side is not baked fully to make rolling easier.
5. Finely chop the onions and mushrooms, then add the ground meat and fry everything until the meat is fully cooked.
6. Spread a layer of ground meat with mushrooms over the pancake and roll it up.
7. Prepare a mixture of sour cream, grated cheese, and dill. Before serving, pour this sauce over the rolls and put them in the oven for 2 minutes.
