Fall earns our love just for giving us the luxurious fruit – pumpkin. It can be used for soups, decor, and of course, preparing delicious meals. In cold weather, we crave something sweet and a bit more to lift our spirits. But pumpkin is perfect for making sweet and healthy desserts.

Today we will share with you a recipe for a very tender and delicious pumpkin casserole. This cottage cheese-pumpkin casserole appeals to both adults and children. It looks so tempting that it can safely take center stage on the holiday table.
Cottage cheese casserole with pumpkin
Ingredients
• 800 g pumpkin
• 500 g cottage cheese
• 200 g sugar
• 5 eggs
• 2 tbsp cornstarch
• 25 g poppy seeds
• pulp of one orange
• 100 g sour cream
Preparation
1. Bake the pumpkin pulp in the oven. Set aside 100 g of pulp for the topping, and squeeze the rest through cheesecloth folded in several layers. Blend the drained pumpkin mass or grind it with a meat grinder. Add 70 g sugar, orange pulp, 2 eggs, 1 tbsp cornstarch, and mix well.
2. Simmer the poppy seeds on low heat for 15 minutes. Then drain the water and dry them.
3. Blend the cottage cheese and 100 g sugar into a homogeneous mass. Then add 2 eggs, 1 tbsp cornstarch, and poppy seeds.
4. Line the bottom of the mold (preferably springform) with parchment paper and grease with butter. Grease the sides with butter and sprinkle with a small amount of flour. Layer one spoonful of cottage cheese mass and pumpkin mass alternately.
5. Gently tap the filled mold on the table so that the mass distributes evenly.
6. Using a wooden stick, draw so-called rays from the edge of the mold to the center. Place in the oven and bake for about 40 minutes at 170 degrees.
7. Meanwhile, prepare the topping: mix sour cream, 30 g sugar, 1 egg, and 100 g pumpkin puree.
8. Pour the topping over the finished casserole and leave in the oven for another 10 minutes.
9. Cool the finished casserole and serve. Enjoy your meal!

Of course, you can increase or decrease the amount of sugar. If youre on a diet, you can replace it with May honey. You can also add cinnamon, candied fruits, and any other ingredients to make the flavor more interesting.
